Plant S Yellow Pea Flour chilli and cheese straws recipe
These are light, tasty and easy to make. Perfect as a snack or canape with drinks or for a picnic.

INGREDIENTS
150g cold, unsalted butter, cut into cubes
225g Plant S Yellow Pea Flour
75g pecorino cheese, grated
pinch of chilli flakes
METHOD
1. Heat oven to 200C, fan 180C, gas 6 and line a large baking tray with parchment paper.
2. Add the butter to a bowl with the Plant S Yellow Pea Flour. Rub together until you get a breadcrumb-like consistency.
3. Add the pecorino to the butter and flour mixture along with the chilli flakes and mix together.
4. Add cold water 1 tsp at a time (you’ll need between 2-4 tsp) and mix to form a dough.
5. Roll out the dough between two pieces of parchment paper until about 1cm thick then cut into a rectangle and then into strips.
6. Place the strips on a lined baking tray and sprinkle some more pecorino on top. Bake for 15-20 mins, until golden and biscuit-like.
