Those four regions are the Pacific Coast, the highlands of the Andes, the Amazon rainforest and the enchanting Galápagos islands. The country’s culinary landscape is the result of this diverse geography and cultural heritage. Each area offers a unique array of ingredients and cooking techniques that contribute to a rich gastronomic tapestry.

Home to more than 17,000 botanical species and 1,500 species of food plants, Ecuador is a world leader in cocoa, coffee, bananas, shrimp and dragon fruit.
