Spasia Dinkovski

Spasia Dinkovski is a London-based chef and the creative force behind Mystic Burek, a food business inspired by Spasia’s North Macedonian grandmother’s cherished recipes. Showcasing second-generation Balkan cooking with a twist, Spasia runs sell-out pop-ups across London, and her filo pies have earned her a devoted following. Spasia has worked in professional kitchens across London and the US for 15 years and has been named one of the Observer Food Monthly’s ‘50 things we love in the world of food’. Her culinary venture has been featured in The Telegraph, The Guardian and Eater, the latter of which named it one of London’s best pop-ups. Her first book, Doma, is published on 4 April.
